Choc Chip Banana Bread
This easy recipe uses healthier unsaturated fats (rapeseed oil instead of butter) and only a small amount of sugar as the bananas and chocolate chips sweeten it up.
Ingredients
250g self-raising flour
3 (approx 320g) large ripe bananas, mashed
2 large eggs
100g chocolate chips
65g rapeseed oil or olive oil
50g porridge oats 
45g sugar or stevia
2 tsp baking powder
1 tsp vanilla extract
Pinch of salt 
Method
- Pre-heat oven to 160°C (fan assisted) and line a loaf tin with greaseproof paper. 
- In a large bowl, mash the bananas and whisk in the egg, oil and vanilla extract. 
- Then add all remaining dry ingredients (flour, oats, choc chips, sugar, baking powder and salt), mix well and pour into your lined loaf tin 
- Bake for 45mins or until a skewer comes out clean. Keep an eye on the top and if it starts to brown too much pop a sheet of foil loosely on top. 
- Cool in tin for 15 minutes then turn out onto a cooling rack. Slice and enjoy!
